Vacuum packaging: what a delicatessen really gains
Shelf life, residual oxygen, drip loss and film choice — the figures that matter, each with its storage temperature and its source.
The question always arrives in the same form: how many days do we gain? The honest answer is that it is incomplete until you say at what temperature. A shelf-life figure without a storage temperature is not a usable claim — and it is precisely what most pages on this subject publish.
What vacuum changes, with figures and temperatures attached
Under vacuum, residual oxygen in the bag falls below 1 %, and the atmosphere that then develops inside the pack contains 20 to 40 % carbon dioxide produced by the meat itself, the balance being nitrogen (CSIRO, Meat Technology Update 09/6). That anaerobic environment stops the aerobic spoilage flora — pseudomonads, yeasts and moulds — which is the first cause of loss under ordinary refrigeration.

The gap between 10 days and 20 weeks is not a contradiction — it is temperature. The Australian 20-week figure assumes storage at −0.5 °C, which few cold chains actually hold. The 35 to 45 days corresponds to ordinary commercial refrigeration. So before you put a date on a label, the real question is: what temperature does your cold chain guarantee, all the way to the shelf?
Poultry behaves differently
On poultry fillets, vacuum buys four to five days, not weeks. In the 2022 trial, modified atmosphere at 40 % CO2 and 0 % oxygen outperformed vacuum over ten days at 2 °C. If your range is mostly poultry, gas-flushing capability is worth specifying when you buy the machine rather than retrofitting it later.
Vacuum is not a preservation treatment
This is the point we repeat most often during commissioning. Vacuum removes the aerobic flora; it does not remove what grows without oxygen.
- Lactic acid bacteria become the dominant flora. After 20 weeks of vacuum storage the total count remains around 1,000 CFU/cm², mostly lactic (CSIRO). They are what sets the sensory limit on sliced ham.
- Non-proteolytic Clostridium botulinum grows from 3 °C upwards and produces toxin under anaerobic conditions. That is exactly the condition vacuum creates.
- Listeria monocytogenes multiplies at refrigeration temperatures and must appear in the hazard analysis.
For that reason the UK Food Standards Agency caps vacuum- and modified-atmosphere-packed chilled food stored at 3 to 8 °C at 10 days unless a controlling factor is demonstrated, with a voluntary 13-day ceiling for unprocessed fresh beef, lamb and pork. This is UK guidance rather than EU law — but it is the most explicit published reference on the question.
The recognised controlling factors, singly or combined: heat treatment of 90 °C for 10 minutes or equivalent lethality at the slowest heating point; pH ≤ 5.0 throughout; ≥ 3.5 % salt in the aqueous phase; aw ≤ 0.97; or a combination validated by challenge testing or predictive modelling.
Real vacuum is measured, not assumed
A study published in Sensors in 2018 tracked residual oxygen in three bulk containers of raw beef of around 300 kg each, over 15 days at 1 °C. The correctly packed bin held between 0.07 and 0.22 % O2. The badly packed one showed 1.8 % on day one, against a target of below 0.5 %.
Three bins, the same machine, the same operator, results differing by a factor of twenty. Vacuum performance is a process-control variable — how the bag is folded, how clean the seal bar is, how much cycle time the pump is actually given — not a property you acquire when you buy the machine.
Purge, drip and real yield
On vacuum-packed primals, drip normally sits between 1 and 2 %. The proportion rises sharply as pieces get smaller: trials on eighths of striploin measured 5 to 10 %, simply because the surface-to-mass ratio increases. If you portion before packing, this line costs you more yield than the price of the bag.
A counter-intuitive but documented result: a vacuum drawn to maximum produces more drip than a moderate one, and a heat-shrunk bag less than a non-shrunk one (CSIRO, Meat Technology Update 02/6). The most aggressive setting is not the best setting.
The film decides as much as the machine
A film's oxygen permeability is measured as OTR — oxygen transmission rate, in cm³ per m² per 24 hours, to ASTM D3985 or F1927. The order of magnitude separates two clear families: a permeable film sits around 10,000 cm³/m²/24 h, a barrier film below 100.
The link to shelf life is established: on sliced cooked ham vacuum packed at 4 °C, comparing pouches at 360 and 77 cm³/m²/24 h, the authors concluded that the higher the OTR, the shorter the shelf life. One implementation caveat: EVOH, which gives the best barrier, loses performance sharply above 75 % relative humidity — which is why it sits as an inner layer, protected between polyamide and polyethylene.
What the label has to carry
A food that is highly perishable from a microbiological point of view carries a "use by" date rather than a minimum durability date, and that date must be accompanied by a description of the storage conditions to be observed (Regulation (EU) No 1169/2011, Articles 24 and 25). Cold-chain temperatures are set by Regulation (EC) No 853/2004: not more than 7 °C for meat, 3 °C for offal, 4 °C for poultry.
Worth noting for sliced ready-to-eat products: Regulation (EU) 2024/2895 amends the microbiological criteria for Listeria monocytogenes and extends the stricter criterion to products already placed on the market during their shelf life, applying from 1 July 2026. If you produce sliced delicatessen products, that is a date for your food safety plan.
